A cake fart is something Karri Brennan has learnt to avoid. What is a cake fart? Well it’s when the fondant and weather decide to ruin your wedding cake.
Karri Brennan creates the most marvellous wedding cakes! Yes that’s a big bold statement but check out these amazing masterpieces she has made.
Karri and her husband bought a bakery, Brenno’s Hotbake, in Narromine (central west NSW) in 2004 and it was here that her cake decorating talent could flourish. Karri began decorating cakes long before they bought the bakery, she tells me that from the 90’s onwards she has been decorating cakes for her kids and sisters, and NOW she is decorating them for rural brides.
A natural talent (jealous because I can’t make toast look enticing), Karri didn’t need to take any classes until about 5 years ago when she wanted to learn the basics. Being a natural fondant whiz Karri learnt everything in 1 quick one on one lesson. “It’s just like playing with play doh as a child really” says Karri when talking about fondant animals… err I don’t know about you but I struggle to make sense of my students play doh creations when it’s their names written in sausages, so god only knows how hectic one of my students animals would be.
Anyways, let’s put it back to natural talent. Karri has done over 500 fondant cakes, an impressive feat when you consider how weird it must be for a bride to get her wedding cake from a bakery. But is it really actually that weird? I think not.
Karri definitely puts in the hours for her cakes. On average a wedding cake takes about 5-6hrs depending on the decoration. Some can take up to 12hrs. It is most certainly worth the effort.

A raw cacao butter cake with salted caramel cream cheese filling and salted caramel drizzle…. I’m dribbling! How flipping delicious does that sound. Now check out the picture below. Is that not the most beautiful and countrified “naked” wedding cake you’ve ever seen? That cake has not one piece let over.
Being rural brides I am sure you’re licking your lips and hoping that Karri does delivery… well you’re in luck!
Karri always delivers cakes for free within a 50km radius of the bakery, then charges a small fee for distances over that amount, Karri has even gone to Perth with a three tier cake. Brenno’s Hotbake would travel ANYWHERE to do a cake.
I asked Karri why? Why be willing to travel so far and her answer was brilliant; “When we first started a few brides wanted the groomsmen collecting the cakes. My heart was in my throat when they were taking off in the car with a beer in one hand and the cake in the other. I was always stressing all day wondering if the cake had made it. I then had brides messaging me asking if the cake had been collected. I made the decision early on that if they want me spending all those hours making it I am delivering it. Brides don’t need to stress and I don’t need to stress.”

The person who you’re looking for is Bec Curry.
Bec owns Wagga Event Hire and has been styling weddings from the get go, originally deciding to go into styling to give couples the opportunity to have a wedding that reflected their personalities. Creative by nature, Bec is completely self-taught and draws inspiration from other industry stylists both at home and overseas. Bec says that she just LOVES to be inspired. “My passion is design and decorating, I also love a good wedding so putting those elements together created my perfect career.” And being a wedding fanatic myself I am just a tad jealous.
Surely hiring a stylist is a luxury most of us can’t afford? No. Bec is very reasonably priced and because of this (and obviously her talent) she averages 3 weddings per week during the wedding season! Bec has styled over 200 weddings in 5 seasons!! I decided to test Bec a bit and gave her this scenario:
I am on a budget, I have allocated $800 towards styling my reception. I have plain tables and chairs and a standard white marquee. I don’t have a theme or colour scheme. How would you style my reception?
Bec responded- “Oh love this! I would find out what flowers are being used in your bouquets and I would draw inspiration from them for a colour scheme. If they were say… plain white, my next thought would be drawing inspiration from the venue selected. A winery, a country hall, a ballroom. Styling to suit the surrounds helps create the tone and ambience desired for a wedding reception. I always meet with my clients and get to know them and their personalities and incorporate that into my overall styling package for them.”
